Un fruto que debe ser de <strong>buena calidad<\/strong> y estar en sinton\u00eda con su terreno. Precisamente, en <a href=\"https:\/\/pontedaboga.es\/\"><strong>Ponte da Boga<\/strong><\/a> disponemos de terrenos que tienen unas variedades aut\u00f3ctonas muy bien adaptadas a la zona. Si hablamos de tinto, Menc\u00eda sobre todo; pero tambi\u00e9n Merenzao, Brancellao o Sous\u00f3n. Si hablamos de blanco, Godello y Albari\u00f1o. Pero no vale solo con disponer de buenas condiciones e infraestructuras y de un producto de buena calidad, ya que hay que saber seleccionar y tratar este \u00faltimo. En nuestro caso es, si cabe, una tarea m\u00e1s ardua todav\u00eda, ya que estamos en la zona por excelencia de la \u2018<strong>viticultura heroica\u2019<\/strong>. El t\u00e9rmino se refiere a unas condiciones del terreno que complican la tarea y que hacen m\u00e1s dif\u00edcil el trabajo de los viticultores y bodegueros. Por ello, para nosotros la vendimia es el momento en el que el trabajo de los <strong>viticultores<\/strong> se muestra en toda su dureza, ya que podemos verles portar la uva por las escarpadas laderas que rodean los ca\u00f1ones del r\u00edo Sil. Despu\u00e9s de la <strong>plantaci\u00f3n<\/strong>, llega la espera. Y luego, la <strong>vendimia<\/strong>. Pero \u00bfqu\u00e9 viene despu\u00e9s? Pues el <strong>prensado<\/strong>, fase que llega inmediatamente despu\u00e9s de la recogida. En este proceso se obtiene el mosto o jugo de la uva. En el caso de los tintos, se prensan y se mezclan junto con la piel, detalle que le proporcionan al tinto ese color oscuro tan caracter\u00edstico. Despu\u00e9s, la <strong>fermentaci\u00f3n<\/strong>. En este proceso se convierten los az\u00facares del mosto en alcohol et\u00edlico. Luego, la <strong>maduraci\u00f3n<\/strong> y el <strong>filtrado<\/strong>, donde se separan los residuos y sedimentos del vino. Pero est\u00e1 claro que es mucho m\u00e1s. Es un arte que solo unos pocos saben hacer correctamente. Y m\u00e1s a\u00fan si se trata de <strong>nuestra tierra<\/strong>. Ya que es imposible valorar apropiadamente los vinos de la Denominaci\u00f3n de Origen Ribeira Sacra si no se conoce de cerca el <strong>entorno<\/strong> del que proceden y las caracter\u00edsticas especiales que exige su producci\u00f3n y, m\u00e1s concretamente, en la fase de la vendimia.
